Bean salads are my go-to when entertaining, but I also find myself making them for meals throughout the week.
This simple bean salad is versatile and can be made with whatever beans or veggies you have in your pantry.
My simple Lemon Vinaigrette
1/4 cup lemon juice (add more if needed)
Half a lemon – freshly squeezed
1/2 tbs garlic chopped
1/4 teaspoon sea salt, more to taste
1/4 ground black pepper
1/4 to 1/3 cup extra-virgin olive oil
